Valentine’s Day Delights and a New Menu Coming to Canyon Bistro

The Canyon Bistro is cooking up a romantic five-course dinner for Valentine’s Day. Three seatings are offered, with a prix fixe menu of $65 per person for the 5 p.m. early bird special, and $75 per person for the 6:30 and 8 p.m. seatings.

The Valentine’s menu opens with a choice of Lobster bisque or vegan butternut squash soup, a Bistro favorite.

The first course features smoked duck salad served over French frisée and Boston lettuce, with walnuts and raspberries in a honey-Dijon vinaigrette; or the pomegranate salad: organic pomegranate over watercress with blood orange, fennel and a Champagne vinaigrette.

For the second course, diners have a choice of the sweet and spicy shrimp kabob with marinated and grilled shrimp and pineapple served with a lime-cayenne aioli; or the wild mushroom tart, with local white mushrooms baked in filo dough and topped with creme fraiche and crispy leeks.

The choice of Entrée includes pan-roasted Pacific halibut in a creamy tarragon mustard sauce, served with harvest grains and grilled asparagus; filet mignon with a red peppercorn sauce served with sautéed spinach and Cajun potatoes; Jidori chicken au jus, with truffled mashed potatoes and French green beans; or a porcini risotto with shallots, garlic, capers, carmelized pearl onions, truffle oil and shaved Parmesan.

The Valentine’s Day dessert menu features mixed berry cobbler with vanilla ice cream; chocolate fondant with ice cream and raspberries; and raspberry cheesecake.

All Valentine dinners come with a complimentary glass of Champagne; diners who choose the second or third seating will be treated to live acoustic guitar music. 

Larry Cohn, the owner of the Canyon Bistro, told the Messenger Mountain News that he is debuting a new “Your Choice” dinner menu after Valentine’s Day. Beginning February 24, the new menu will offer a mix-and-match approach to old favorites and new offerings. 

“Create your favorite plates now or mix it up each visit,” he said. “All the favorites are here, but now can be custom selected, and there are more vegetarian and vegan options, including the Beyond Burger for our vegan customers.”

Reservations are recommended for the Canyon Bistro’s special Valentine’s Day  five-course Chef’s menu. This is a favorite Valentine’s destination for Canyon romantics and reservations for all three seatings fill up fast.

The Canyon Bistro’s new dinner menu arrives February 24. Stop by Monday through Friday, 4-6:30 p.m. for Happy Hour, or for live music, every Friday night at 7:30 pm.
